  • 1 cup BBQ sauce (divided)
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon garlic powder
  • ½ teaspoon chili powder
  • ¼ teaspoon salt
  • ¼ teaspoon black pepper
  • 2 pounds boneless skinless chicken breasts (or thighs)
  • Burger buns (optional, for serving)

Instructions

  1. In the Instant Pot, mix chicken broth, ½ cup of BBQ sauce, apple cider vinegar, garlic powder, chili powder, salt, and black pepper until well combined.
  2. Add the chicken breasts into the pot ensuring they are submerged in the sauce mixture.
  3. Close the lid and set the steam release valve to sealing. Cook on high pressure for 16 minutes.
  4. Allow natural pressure release for about 10 minutes before carefully venting any remaining steam.
  5. Check that the chicken has reached an internal temperature of at least 165°F.
  6. Remove the chicken and shred it with two forks. Mix in additional BBQ sauce as desired.
