  • 2 pounds beef stewing meat (cut into 23 inch cubes)
  • 1/4 cup all-purpose flour
  • 2 teaspoons salt
  • 1/4 teaspoon freshly ground pepper
  • 4 tablespoons vegetable oil
  • 1 cup red grape juice
  • 2 tablespoons butter (unsalted)
  • 1 medium onion (diced)
  • 5 cloves garlic (minced and whole)
  • 4 cups low-sodium beef broth
  • 3 bay leaves
  • Fresh thyme
  • 4 medium carrots (sliced)
  • 1 cup celery (diced)
  • 1 pound mini red potatoes (halved)
  • 8 ounces baby Bella mushrooms (halved)

Instructions

  1. In a large bowl, toss the beef with flour, salt, and pepper until coated.
  2. Heat vegetable oil in a heavy-duty pot over medium-high heat. Brown the beef in batches for about five minutes per side; set aside.
  3. Deglaze the pot with grape juice, scraping up browned bits.
  4. Stir in butter, diced onion, and minced garlic; cook for one minute.
  5. Add Worcestershire sauce and tomato paste; mix well.
  6. Pour in beef broth and return the browned beef along with quartered onion, whole garlic cloves, bay leaves, and thyme.
  7. Cover and simmer on low for about one-and-a-half hours until tender.
  8. Preheat oven to 300°F (150°C).
  9. Discard herbs after cooking; add vegetables and transfer to oven for one hour until veggies are tender.
  10. Adjust seasoning if needed before serving.
