  • 2 ¼ teaspoons active dry yeast
  • 3 tablespoons olive oil
  • 1 ½ teaspoons salt
  • 3 cups all-purpose flour (plus more as needed)

Instructions

  1. In a mixing bowl, combine warm water, honey, and yeast. Let sit for 5 minutes until foamy.
  2. Add olive oil, salt, and flour. Mix until combined, then knead using a dough hook on low speed for about 8 minutes until slightly sticky.
  3. Cover the bowl with a towel and allow the dough to rise for 45 minutes to an hour until doubled in size.
  4. Transfer the dough to a floured surface, knead gently, and divide into 8 equal pieces. Roll each piece into a round shape about 6 inches in diameter.
  5. Let the rolled-out pitas rest on parchment paper for about 15 minutes.
  6. Preheat your oven to 450°F on a baking stone or to 425°F if using baking sheets lined with parchment paper.
  7. Bake the pitas in batches for about 2 minutes on one side until puffy; flip and bake for another minute until lightly golden brown.
