  • 1 cup matchstick carrots
  • 1 cup diced celery
  • 4 cloves garlic (minced)
  • 3 tablespoons all-purpose flour
  • 1 (12 oz) can evaporated milk
  • 1 (32 oz) quart chicken stock
  • 4 cups shredded cooked chicken
  • 2 cups all-purpose flour (for dumplings)
  • 1 tablespoon, plus 1 teaspoon baking powder
  • 1 teaspoon freshly cracked black pepper
  • 1 teaspoon salt
  • 1 tablespoon fresh thyme (or 1 teaspoon dried thyme, optional)
  • 3/4 cup (6 oz) whole milk
  • 4 tablespoons butter (melted)

Instructions

  1. In a large heavy-bottomed pot, melt butter over medium-high heat. Sauté onion, carrots, and celery for about 5 minutes until softened. Add minced garlic and cook for an additional minute.
  2. Stir in flour and cook for one minute. Gradually mix in evaporated milk and chicken stock while constantly stirring to avoid lumps.
  3. Bring the mixture to a boil, then add shredded chicken, thyme, black pepper, and salt. Lower heat and let simmer uncovered.
  4. In a separate bowl, combine all-purpose flour, baking powder, black pepper, salt, thyme, whole milk, and melted butter until just mixed.
  5. Drop spoonfuls of the dumpling mixture into the simmering soup. Cover tightly and cook for approximately 15–20 minutes without lifting the lid.
  6. Serve hot with fresh thyme if desired.
