  • 1 teaspoon baking powder

  1. Preheat your oven to 180C/350F. Grease and line a 9 x 5-inch baking pan with parchment paper.
  2. In a mixing bowl, combine the flour, coconut sugar, baking powder, baking soda, salt, and cinnamon.
  3. In another bowl, whisk together the egg, Greek yogurt, and mashed bananas until well blended.
  4. Gently fold the wet mixture into the dry ingredients until just combined. Fold in the shredded zucchini and your choice of mix-ins.
  5. Pour the batter into the prepared pan and bake for 45-55 minutes or until a toothpick inserted comes out mostly clean.
