  • 1 medium yellow onion
  • 2 tablespoons vegetable oil
  • Salt
  • Pinch of sugar
  • 4 slices pumpernickel bread
  • 6 ounces soft Gruyere cheese (not shredded)
  • 1/3 cup blue cheese crumbles
  • Optional: 2 tablespoons crushed pecans

Instructions

  1. Preheat a large cooking pan over medium-low heat and add vegetable oil.
  2. Thinly slice the onion and add it to the pan with a pinch of sugar and salt. Cook slowly for about 20-25 minutes until deep brown.
  3. In the same pan, lay all four slices of pumpernickel bread and evenly distribute the Gruyere cheese on top.
  4. On two slices, add blue cheese crumbles; on the other two, spread the caramelized onions.
  5. Cover the pan and cook until the cheese begins to melt; then place the blue cheese slices on top of those with onions.
  6. Cook for another minute until heated through and serve hot, optionally adding crushed pecans for crunch.
