  • 1 medium yellow onion
  • 2 Tbsp vegetable oil
  • Salt
  • Pinch of sugar
  • 4 slices pumpernickel bread
  • 6 oz soft Gruyere cheese
  • 1/3 cup blue cheese crumbles
  • Optional: 2 Tbsp crushed pecans

Instructions

  1. Preheat a skillet over medium-low heat with vegetable oil.
  2. Add sliced onion, sprinkle with sugar and salt; cook slowly for 20-25 minutes until golden brown.
  3. Grease the skillet again and place pumpernickel bread slices inside.
  4. Divide Gruyere cheese among all slices; add blue cheese on two slices and caramelized onions on the others.
  5. Cover the skillet to melt the cheese, then sandwich together and heat for another minute until warmed through.
  6. If using pecans, sprinkle them on before finishing.
