  • 1.5 lb raw shrimp (peeled and deveined)
  • 2 tablespoons olive oil
  • 1.5 cups orzo
  • 3 cups chicken stock (or vegetable stock)
  • 8 oz cherry tomatoes (halved)
  • ⅓ cup sun-dried tomatoes (chopped)
  • ⅓ cup kalamata olives (sliced)
  • ¼ cup green olives (sliced)
  • 6 oz feta cheese (crumbled)
  • Fresh basil (chopped)

Instructions

  1. In a bowl, season shrimp with smoked paprika, chili powder, Italian seasoning, red pepper flakes, and salt.
  2. Heat olive oil in a large skillet over medium heat. Add orzo and toast for about 2 minutes until golden.
  3. Pour in chicken stock while scraping any browned bits from the pan. Bring to a boil then reduce heat.
  4. Add cherry tomatoes and sun-dried tomatoes; stir to combine.
  5. Place seasoned shrimp on top of the mixture. Cover and simmer for about 5–7 minutes until shrimp is cooked through.
  6. Remove from heat; stir in olives, feta cheese, lemon juice, extra virgin olive oil, additional spices, fresh basil, salt, and pepper to taste.
