  • 1 tbsp baking powder
  • 1/4 tsp baking soda
  • 1 tsp coarse salt
  • 1 tsp sugar
  • 1/2 cup freshly grated parmesan cheese
  • 6 tbsp cold unsalted butter
  • 1 cup cold buttermilk
  • 2 tsp minced fresh rosemary
  • 2 tsp minced fresh thyme

Instructions

  1. Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, whisk together flour, baking powder, baking soda, salt, sugar, parmesan cheese, rosemary, and thyme.
  3. Cut cold butter into small pieces and incorporate into the flour mixture using an electric mixer on low speed until it resembles coarse crumbs.
  4. Pour in buttermilk and mix on low speed until just combined; avoid overmixing.
  5. Transfer the dough to a lightly floured surface, knead gently a few times, then shape into a circle about ½ inch thick.
  6. Use a cookie cutter to cut out biscuits and place them on the prepared baking sheet.
  7. Brush each biscuit with melted garlic butter (with pressed garlic mixed in) and sprinkle additional herbs and parmesan on top.
