  • 1.5 pounds beef stew meat, cut into bite-sized pieces
  • 1 pound baby potatoes, halved
  • 4 tablespoons unsalted butter, melted
  • 3 cloves garlic, minced
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika
  • 0.5 teaspoon dried thyme
  • 0.5 teaspoon dried rosemary
  • 0.5 teaspoon salt (or to taste)
  • 0.25 teaspoon black pepper
  • 0.25 cup beef broth
  • 1 tablespoon olive oil

Instructions

  1. Prep the ingredients by cutting the beef into bite-sized pieces and halving the baby potatoes.
  2. Optionally parboil the halved baby potatoes for a few minutes.
  3. In a skillet over medium-high heat, sear the beef bites in olive oil until browned on all sides.
  4. Mix melted butter with garlic, onion powder, smoked paprika, thyme, rosemary, salt, and black pepper to create the garlic butter sauce.
  5. In your slow cooker, layer the halved baby potatoes and seared beef; pour the garlic butter sauce over everything and add beef broth.
  6. Cover and cook on low for 6-8 hours or on high for 3-4 hours until the beef is fork-tender.
  7. Let rest for about 10 minutes before serving.
