  • 2 lbs lamb rib chops (8 count)
  • 5 garlic cloves (pressed)
  • 4 tablespoons olive oil
  • 2 tablespoons fresh parsley
  • 2 teaspoons Tabasco sauce
  • 1 teaspoon fine sea salt
  • 1 teaspoon black pepper
  • 1/4 teaspoon dried thyme
  • 1/2 cup chicken stock
  • 2 tablespoons unsalted butter

Instructions

  1. In a small bowl, mix pressed garlic, olive oil (reserve some), parsley, Tabasco sauce, sea salt, black pepper, and thyme.
  2. Marinate the lamb chops in the mixture for at least 30 minutes or overnight in the fridge.
  3. Preheat a heavy skillet over medium-high heat and add reserved olive oil.
  4. Sear each side of the marinated lamb chops for about 3-4 minutes until golden-brown.
  5. Use a meat thermometer to check for medium-rare doneness (145°F).
  6. Remove chops from skillet; make pan sauce by adding chicken stock and butter to deglaze.
  7. Serve lamb chops with pan sauce drizzled on top.
