  • 25 ounces frozen cheese ravioli (thawed)
  • 34 cups vegetable oil
  • 1 cup all-purpose flour
  • ½ teaspoon kosher salt
  • ½ teaspoon fresh cracked black pepper
  • 2 large eggs
  • ⅓ cup whole milk
  • 1 cup Italian bread crumbs
  • ¾ cup panko bread crumbs
  • ¾ cup freshly grated parmesan cheese (divided)
  • 1 tablespoon freshly chopped parsley (optional)

Instructions

  1. Thaw the ravioli by refrigerating overnight or briefly boiling and patting dry.
  2. Set up three dredging stations: mix flour, salt, and pepper in one; whisk eggs and milk in another; combine breadcrumbs and half of the parmesan in the last.
  3. Heat oil in a deep-sided skillet to 325°F.
  4. Dredge each ravioli first in flour, then egg mixture, followed by breadcrumb coating.
  5. Fry ravioli in batches for about 2-3 minutes per side until golden brown.
  6. Drain on paper towels and sprinkle with remaining parmesan before serving.
