Ingredients

Scale
  • 2 pounds ground beef
  • 3 large yellow onions, thinly sliced
  • 2 cups Gruyere cheese, freshly shredded
  • 12 slices thick Texas toast bread
  • 8 teaspoons mayonnaise (for grilling)
  • ⅓ cup mayonnaise (for aioli)
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon black pepper
  • 1 tablespoon fresh garlic, minced (about 3 cloves)
  • 1 teaspoon fresh parsley, chopped
  • 1 tablespoon ketchup
  • 1 tablespoon ketchup (for beef patties)
  • ½ teaspoon garlic powder
  • 1 teaspoon kosher salt
  • ½ teaspoon black pepper
  • 3 tablespoons butter

Instructions

  1. Caramelize the onions by cooking sliced yellow onions with butter in a skillet over medium-low heat for 15-20 minutes until golden brown.
  2. In a mixing bowl, blend ground beef with ketchup, garlic powder, kosher salt, and black pepper. Form into eight thin patties.
  3. Cook the patties in the same skillet over medium-high heat for 1-2 minutes per side until just cooked through.
  4. Toast four slices of Texas toast until golden brown. Meanwhile, whisk together mayonnaise, lemon juice, black pepper, minced garlic, parsley, and ketchup to make the aioli.
  5. Assemble the sandwiches with layers of cheese, beef patties, caramelized onions, and aioli on untoasted slices of bread.
  6. Grill the assembled sandwiches in the skillet until golden brown on both sides.
