  • 2 TBSP coconut oil (or olive oil)
  • 3 cloves garlic (minced)
  • 1 cup onion (chopped)
  • 20 ounces lean ground turkey
  • 1/2 cup breadcrumbs or 2 pieces of Ezekiel bread (toasted and broken into pieces)
  • 1 large egg (or 1/4 cup liquid egg whites)
  • 1/4 cup ketchup
  • 1/2 teaspoon black pepper

Instructions

  1. Preheat your oven to 350 degrees Fahrenheit.
  2. In a sauté pan, melt coconut oil and cook minced garlic and chopped onion over medium heat for about 5-7 minutes until soft. Transfer to a mixing bowl and let cool for 5 minutes.
  3. Add ground turkey, breadcrumbs (or Ezekiel bread), egg (or egg whites), ketchup, and black pepper to the cooled mixture. Mix until just combined.
  4. Shape the mixture into a loaf and place in a glass baking dish.
  5. Bake for about 50-55 minutes or until the internal temperature reaches at least 165 degrees Fahrenheit.
