  • 10.5oz fresh Tortellini
  • 4 cups Chicken Stock (or Vegetable Stock)
  • 2 cans (14oz each) Chopped Tomatoes
  • 1/4 cup Tomato Puree
  • 1 cup Onion (finely diced)
  • 1 cup Carrot (finely diced)
  • 1 cup Celery (finely diced)
  • 1 cup Zucchini (finely diced)
  • 4 cloves Garlic (finely diced)
  • Fresh Basil (approx 1oz)
  • Parmesan Rind
  • Seasonings: Worcestershire Sauce, Italian Seasoning, Sugar, Salt & Pepper
  • Olive Oil

Instructions

  1. Heat olive oil in a large pot over medium-high heat. Add onion, carrot, celery, and zucchini; sauté until soft and lightly golden (about 15 minutes).
  2. Stir in garlic along with salt and pepper; cook for an additional minute. Add tomato puree and sauté for another 1-2 minutes.
  3. Pour in chicken stock and chopped tomatoes; add Worcestershire sauce, Italian seasoning, sugar, and Parmesan rind. Bring to a gentle simmer for 20 minutes.
  4. Uncover and bring to a rapid simmer; add tortellini and cook according to package instructions. Stir in fresh basil before serving.
