  • 1 tablespoon olive oil
  • 1 lbs lean ground beef
  • 1 onion, chopped
  • 2 ribs celery, chopped
  • 2 carrots, peeled and chopped
  • ½ teaspoon dried oregano
  • ½ teaspoon dried marjoram
  • ½ teaspoon dried parsley
  • ½ teaspoon dried thyme
  • ¼ teaspoon dried basil
  • 6 cups low-sodium beef broth or vegetable broth
  • 2 large red potatoes or Yukon gold potatoes, cut into small cubes
  • 1½ cups fresh green beans, trimmed and cut into one-inch pieces
  • 1 (15 ounce) can corn, drained
  • 1 (15 ounce) can fire roasted tomatoes
  • Kosher salt and black pepper to taste

Instructions

  1. In a Dutch oven or heavy stock pot, heat olive oil over medium-high heat. Add lean ground beef, breaking it apart with a spoon.
  2. Once the beef is halfway browned, add chopped onion, celery, and carrots, cooking until softened. Drain any excess grease.
  3. Stir in dried oregano, marjoram, parsley, thyme, and basil; cook for one minute.
  4. Add low-sodium broth, diced potatoes, and green beans to the pot. Bring to a boil.
  5. Reduce heat and simmer for 15 minutes; then add fire-roasted tomatoes and corn. Simmer for another five minutes until all ingredients are tender.
  6. Season with kosher salt and black pepper to taste before serving.
