  • 1 large yellow onion, chopped
  • 2 cloves garlic, minced
  • 2 cups marinara sauce
  • 2 cups beef broth
  • 14 ounces canned diced tomatoes
  • 3 tablespoons tomato paste
  • 1 green bell pepper, diced (optional)
  • 1 ½ cups elbow macaroni
  • Italian seasoning, salt, and pepper to taste

Instructions

  1. In a large skillet or Dutch oven over medium-high heat, cook the ground beef with the chopped onion and minced garlic until the meat is browned. Drain excess fat.
  2. Stir in the marinara sauce, beef broth, canned diced tomatoes (with juices), tomato paste, optional bell pepper, Italian seasoning, salt, and black pepper. Bring to a boil.
  3. Add the elbow macaroni to the mixture. Reduce heat to medium-low and cover; simmer for about 10 minutes, stirring occasionally.
  4. After 10 minutes, uncover and continue to simmer for an additional 5 to 10 minutes until pasta is tender.
  5. Remove bay leaf before serving. Top with shredded cheese if desired.
