  • 16 oz Rotini Pasta
  • 2 cups baby dill pickles (sliced)
  • 1.5 cups diced sharp cheddar cheese
  • 0.5 cup finely chopped sweet yellow onion
  • 0.5 cup sliced green onion
  • 4 tbsp chopped fresh dill
  • 0.75 cup mayonnaise
  • 0.5 cup sour cream
  • 0.33 cup dill pickle juice
  • onion powder
  • kosher salt
  • black pepper
  • chipotle powder

Instructions

  1. Cook the rotini pasta in a large pot of boiling water until al dente. Drain and rinse under cold water.
  2. While the pasta cooks, slice the baby dill pickles and dice the cheddar cheese.
  3. In a mixing bowl, whisk together mayonnaise, sour cream, dill pickle juice, onion powder, salt, black pepper, chipotle powder, and half of the chopped fresh dill.
  4. In a large bowl, combine cooled pasta with sliced pickles, diced cheese, chopped sweet onion, sliced green onion, and remaining dill. Pour dressing over the mixture and toss gently to coat.
  5. Cover and refrigerate for at least an hour before serving to allow flavors to meld.
