  • 1 lb ground chicken
  • 1 medium yellow onion, chopped
  • 3 cloves garlic, minced
  • 1 (15-ounce) can diced tomatoes
  • 1 (15-ounce) can crushed tomatoes
  • 2 tablespoons tomato paste
  • 6 cups low-sodium beef broth
  • 810 uncooked lasagna noodles, broken into bite-size pieces
  • 8 ounces whole milk ricotta cheese
  • 1 cup shredded mozzarella cheese
  • ¼ cup grated Parmesan cheese

Instructions

  1. In a large skillet over medium heat, brown the ground chicken until fully cooked. Add chopped onion halfway through cooking until softened.
  2. Stir in minced garlic and dried herbs (parsley, oregano, marjoram, basil, thyme) for about one minute.
  3. Transfer mixture to the crockpot; add diced tomatoes, crushed tomatoes, tomato paste, and beef broth. Cover and cook on low for 4 hours or high for 2 hours.
  4. Once cooked, stir in broken lasagna noodles and cover again for an additional 35-45 minutes until tender.
  5. In a separate bowl, mix ricotta with mozzarella, Parmesan cheese, and fresh parsley.
  6. Serve soup topped with the cheese mixture.
