  • 1 large onion (diced)
  • 5 garlic cloves (minced)
  • 2 lb chuck roast (cut into 4 pieces)
  • Salt and pepper to taste
  • 1 can (28 oz) crushed tomatoes
  • 1/4 cup red grape juice
  • 1.5 cups beef broth
  • 3 tbsp tomato paste
  • 3 sprigs fresh thyme
  • 2 dried bay leaves
  • 16 oz pappardelle noodles

Instructions

  1. Prepare your aromatics by chopping the onion and mincing the garlic. Place them in the crockpot with a drizzle of olive oil on high.
  2. Season the chuck roast with salt and pepper before placing it atop the onions.
  3. Add crushed tomatoes, grape juice, beef broth, tomato paste, thyme sprigs, and bay leaves over the meat. Spoon some liquid over the roast.
  4. Cover and cook on high for about 6 hours until the beef is tender.
  5. Shred the beef using two forks and return it to the sauce; set to warm.
  6. Cook pappardelle noodles according to package instructions.
  7. Serve pasta topped generously with ragu and garnish with parmesan cheese, ricotta, and fresh thyme.
