  • 32 oz ricotta cheese
  • 2 large eggs
  • 1 teaspoon salt
  • 1 teaspoon dried basil
  • 48 oz marinara sauce (two 24 oz jars)
  • 12 oz gluten-free penne pasta
  • 16 oz shredded mozzarella cheese
  • 1/4 cup grated parmesan cheese (plus more for topping)

Instructions

  1. Prepare your slow cooker by spraying the insert with non-stick spray.
  2. In a mixing bowl, combine ricotta cheese, eggs, salt, basil, and pepper until smooth.
  3. Spread a layer of marinara sauce at the bottom of the slow cooker.
  4. Layer gluten-free penne over the sauce evenly.
  5. Drop spoonfuls of the ricotta mixture on top of the pasta layer.
  6. Sprinkle shredded mozzarella over the ricotta mixture.
  7. Repeat layers (sauce, pasta, ricotta, mozzarella) until all ingredients are used.
  8. Finish with a layer of marinara sauce topped with mozzarella and extra parmesan.
  9. Cover and cook on high for 2½ hours or until bubbly and heated through.
