  • 4 boneless skinless chicken breasts, thinly sliced
  • 2 tablespoons olive oil
  • 8 ounces sliced mushrooms
  • 1/4 cup butter
  • 2 garlic cloves, minced
  • 1 tablespoon flour
  • 1/2 cup chicken broth
  • 1 cup heavy cream or half-and-half
  • 1/2 cup grated parmesan cheese
  • 1 cup spinach, chopped

Instructions

  2. In the same skillet, sauté sliced mushrooms until tender. Remove and set aside.

  4. Add chopped spinach and let it simmer until it wilts. Return the cooked chicken and mushrooms to the skillet; toss gently.
