  • 1 pound boneless skinless chicken breasts (cut into ¾ inch pieces)
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 2 tablespoons unsalted butter
  • ⅓ cup sweet yellow onion (diced)
  • 1 tablespoon minced garlic
  • ½ cup chicken broth
  • 21 ounces condensed cheddar cheese soup (undiluted)
  • ¼ cup whole milk
  • ½ cup chopped baby spinach

Instructions

  1. Cook orzo pasta in a large pot of salted boiling water according to package directions for 9-11 minutes until al dente. Drain and set aside.
  2. In a large skillet over medium-high heat, add olive oil and chicken pieces seasoned with salt and pepper. Cook for about 7-9 minutes until golden and cooked through. Remove chicken from skillet.
  3. Lower heat to medium-low, add butter, diced onions, and minced garlic to the skillet; cook until tender.
  4. Pour in chicken broth and stir in dried mustard and paprika; simmer for another 2-3 minutes.
  5. Add cheddar cheese soup and milk; stir continuously until smooth.
  6. Stir in cooked orzo and return the chicken along with chopped spinach; cook until spinach wilts, about 2-3 minutes.
  7. Serve immediately, garnished with parsley if desired.
