  • 1 1/2 lb. boneless, skinless chicken thighs
  • 3 Tbsp. unsalted butter
  • 1 medium yellow onion
  • 3 large carrots
  • 3 stalks celery
  • 4 cloves garlic
  • Fresh thyme and rosemary
  • 6 cups chicken broth
  • 1 cup half-and-half
  • 1 cup long grain white rice

Instructions

  1. In a bowl, season diced chicken thighs with salt, Italian seasoning, mustard powder, paprika, and chili flakes.
  2. Melt butter in a large pot over medium heat; sauté diced onion, carrots, and celery for about 5 minutes until softened. Add minced garlic and sauté for another 30 seconds.
  3. Add the seasoned chicken to the pot; cook until no longer pink.
  4. Sprinkle flour over the mixture; stir to combine.
  5. Gradually pour in chicken broth and half-and-half while stirring. Add uncooked rice.
  6. Bring to a boil; reduce heat and let simmer for 15–20 minutes until the rice is fully cooked.
  7. Adjust consistency with extra broth if needed; season to taste before serving.
