  • 34 lbs chuck roast
  • 1 tbsp olive oil
  • 1 large onion (diced)
  • 1 lb carrots (chopped)
  • 2 cups celery (chopped)
  • 2 large garlic cloves (minced)
  • 4 tsp kosher salt
  • 1 ½ tsp black pepper
  • 4 cups beef stock
  • 1 tbsp Worcestershire sauce
  • ½ cup red grape juice
  • 3 bay leaves
  • Fresh thyme leaves

Instructions

  1. Heat olive oil in a Dutch oven over medium-high heat. Sear the chuck roast on all sides until browned, then remove from pot.
  2. In the same pot, add diced onion, chopped carrots, chopped celery, and minced garlic. Sauté for about 5 minutes.
  3. Return the roast to the pot and add kosher salt, black pepper, beef stock, Worcestershire sauce, red grape juice, water, bay leaves, and thyme. Stir to combine.
  4. Cover and reduce heat to low; let it simmer for about 6 hours until the meat is tender and easily shreds.
  5. Serve warm with gravy over mashed potatoes or alongside roasted vegetables.
