  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar, packed
  • 2 large eggs
  • 1/2 cup unsweetened applesauce
  • 1/3 cup vegetable oil
  • 1 teaspoon vanilla extract
  • 2 cups apples, peeled and chopped (about 2 medium apples)
  • For Topping: 1 tablespoon granulated sugar
  • 1 teaspoon ground cinnamon

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large mixing bowl, whisk together flour, baking soda, salt, and cinnamon.
  3. In another bowl, beat granulated sugar, brown sugar, and eggs until smooth. Stir in applesauce, vegetable oil, and vanilla extract until combined.
  4. Gradually add the dry mixture to the wet mixture until just combined; do not overmix.
  5. Gently fold in chopped apples.
  6. Pour into a greased loaf pan and smooth the top.
  7. In a small bowl, combine sugar and cinnamon for topping; sprinkle over the batter.
  8. Bake for 55-60 minutes or until a toothpick comes out clean. Cool before slicing.
