  • 1 teaspoon cinnamon
  • ¾ teaspoon baking soda
  • ¼ teaspoon salt
  • 3 tablespoons unsweetened cocoa powder
  • ½ cup sugar
  • ¼ cup brown sugar
  • ¼ cup canola oil
  • 2 eggs
  • 1 teaspoon vanilla extract
  • ¼ cup sour cream
  • 1 ½ cups grated and strained zucchini
  • ½ cup mini chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9" bread pan and set aside.
  2. In a small bowl, mix together the topping ingredients: brown sugar, granulated sugar, and cinnamon.
  3. In another bowl, whisk together the dry ingredients: flour, cinnamon, baking soda, salt, and cocoa powder.
  4. In a mixing bowl, beat the sugars and canola oil until fluffy. Add eggs one at a time, then mix in vanilla and sour cream.
  5. Gently fold in the grated zucchini followed by the dry ingredient mixture until just combined. Then fold in mini chocolate chips.
  6. Pour the batter into the prepared pan and sprinkle the topping mixture over it.
  7. Bake for approximately 50-60 minutes until a toothpick inserted comes out clean.
  8. Cool in the pan for 5-10 minutes before transferring to a wire rack to cool completely.
