Indulge in the comforting delight of Chicken Lasagna, a dish that combines layers of tender chicken, creamy cheeses, and rich flavors into a satisfying meal perfect for any occasion.

Ingredients

  • Lasagna noodles
  • Shredded mozzarella cheese
  • Shredded parmesan cheese
  • Cottage cheese (or Ricotta)
  • Cooked chicken (finely chopped)
  • Olive oil
  • Onion
  • Garlic
  • Fresh spinach
  • Heavy cream

Instructions

  1. Preheat oven to 375°F (190°C). Cook lasagna noodles according to package instructions; drain and set aside.
  2. In a large pot, heat olive oil over medium heat. Sauté diced onion until translucent, then add minced garlic and cook until fragrant.
  3. In a mixing bowl, combine cooked chicken with sautéed onions and garlic; season with salt, pepper, chopped basil, and spinach.
  4. In another bowl, mix cottage cheese (or Ricotta), egg, heavy cream, parsley, and half of the mozzarella until blended.
  5. In a baking dish, layer chicken stock at the bottom. Add noodles followed by half of the chicken mixture and half of the cheese mixture. Repeat layers ending with noodles on top. Finish with remaining mozzarella and parmesan.
  6. Cover with foil and bake for 30 minutes; remove foil and bake an additional 35 minutes until golden brown.
  7. Let cool for 15 minutes before slicing.
