  • 9 lasagna noodles (cooked al dente)
  • 4 cups shredded rotisserie chicken
  • 1 Tbsp olive oil
  • 1 medium onion (finely chopped)
  • 4 Tbsp unsalted butter
  • 1/3 cup all-purpose flour
  • 2 1/2 cups chicken broth
  • 1 1/2 cups half and half
  • 5 oz fresh spinach (coarsely chopped)
  • 15 oz ricotta cheese
  • 3 cups mozzarella cheese (divided)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a saucepan over medium heat, add olive oil and sauté the onion until translucent. Stir in minced garlic for one minute.
  3. Add butter until melted; sprinkle in flour and whisk constantly. Gradually pour in chicken broth, whisking until smooth.
  4. Stir in half and half, salt, pepper, and chopped spinach; cook until slightly thickened.
  5. In a mixing bowl, combine ricotta cheese, egg, parsley, and half of the mozzarella cheese; mix well.
  6. In a baking dish, layer sauce on the bottom followed by three lasagna noodles. Spread half of the cheese mixture and half of the chicken on top; repeat layers ending with noodles topped with remaining sauce.
  7. Sprinkle reserved mozzarella on top and cover with foil; bake for 30 minutes. Remove foil and bake an additional 15 minutes until bubbly and golden brown.
