  • 3 cups shredded rotisserie chicken (skin removed)
  • 1 tablespoon olive oil
  • 1 large sweet yellow onion (sliced)
  • 1 large red bell pepper (sliced)
  • 1 large yellow bell pepper (sliced)
  • 1 large green bell pepper (sliced)
  • 8 ounce block cheddar-jack cheese (shredded)

Instructions

  1. Preheat your oven to 350°F and spray a 9×13 baking dish with non-stick cooking spray.
  2. Cook the long-grain white rice according to package directions and transfer it to a large mixing bowl.
