  • 2 cups red enchilada sauce
  • 8 corn tortillas
  • 2 cups shredded cooked chicken
  • 2 cups shredded Mexican blend cheese (or cheddar, jack, mozzarella)

Instructions

  1. Preheat your oven to 350°F.
  2. Spread some enchilada sauce in the bottom of an 8×8-inch baking dish.
  3. Layer half of the tortillas over the sauce. Add half of the shredded chicken, then sprinkle with a quarter of the cheese, and pour a quarter of the remaining enchilada sauce.
  4. Repeat layering with the remaining tortillas, chicken, cheese, and enchilada sauce.
  5. For the top layer, add the last tortillas and pour any remaining sauce before finishing with the rest of the cheese.
  6. Cover with greased aluminum foil and bake for 25 minutes. Remove foil and bake for an additional 5-10 minutes until bubbly and golden.
