  • 6 oz Chow Mein Noodles
  • 2 boneless skinless chicken breasts, sliced into strips
  • 2 tablespoons vegetable oil
  • 2 celery stalks, chopped
  • 2 cups green cabbage, thinly sliced
  • ½ cup carrots, matchstick cut
  • 3 green onions, chopped (divided)
  • 2 teaspoons minced ginger
  • 3 teaspoons minced garlic
  • ¼ cup low sodium soy sauce
  • 1½ tablespoons oyster sauce
  • ½ tablespoon granulated sugar
  • 1 teaspoon sesame oil
  • Salt and pepper to taste

Instructions

  1. Prepare all vegetables and slice chicken; season with salt and pepper.
  2. Heat 1 tablespoon of vegetable oil in a wok over medium-high heat and stir-fry the chicken until slightly browned (about 5 minutes). Remove and drain excess oil.
  3. Cook chow mein noodles according to package instructions; set aside.
  4. In the same wok, add another tablespoon of oil and stir-fry celery and carrots for about 2–3 minutes. Add cabbage and half of the green onions; cook until tender yet crunchy (about another 3–4 minutes).
  5. Mix ginger, garlic, soy sauce, oyster sauce, sugar, and sesame oil in a bowl.
  6. Return chicken and noodles to the pan; pour sauce mixture over everything. Toss well to coat until heated through.
  7. Garnish with remaining green onions before serving.
