  • 1 lb chicken
  • 2 TBSP butter
  • 1/2 tsp salt
  • 1/4 tsp cayenne pepper
  • 1 tsp cumin
  • 1 tsp dried cilantro
  • 1 tsp chili powder
  • 1 TBSP minced garlic
  • 10 oz can Rotel diced tomatoes
  • 8 oz can tomato sauce
  • 1 1/2 cups chicken broth
  • 1 cup long-grain white rice (uncooked)
  • 1 TBSP olive oil
  • White queso cheese dip (store-bought or homemade)
  • Fresh cilantro for garnish

Instructions

  1. Cut the chicken into small pieces. In a skillet over medium-high heat, melt the butter.
  2. Season the chicken with salt, cayenne, cumin, cilantro, and chili powder. Cook until fully cooked through.
  3. Move the chicken to the edges of the skillet. Add olive oil and uncooked rice; stir for a couple of minutes.
  4. Combine Rotel, tomato sauce, minced garlic, and chicken broth in the skillet. Mix well.
  5. Cover and reduce heat to medium-low; cook for about 15–20 minutes until rice is tender.
  6. Top with white queso cheese dip and garnish with fresh cilantro.
  7. Serve warm in tortillas or with tortilla chips.
