  • 1 onion (chopped)
  • 2 tsp chili powder
  • 1 tsp cumin
  • 10 oz can of Rotel (not drained)
  • 8 oz can of tomato sauce
  • 10 oz can of corn (drained)
  • 10 oz can black beans (drained and rinsed)
  • 1 cup long grain white rice (uncooked & rinsed)
  • 2 cups shredded Colby Jack cheese
  • 1 ½ cups chicken or beef broth

Instructions

  1. In a skillet over medium-high heat, brown the ground beef along with chopped onions and seasonings until fully cooked.
  2. Drain any excess grease from the skillet for a healthier dish.
  3. Stir in minced garlic, Rotel, tomato sauce, corn, black beans, broth, and rinsed rice; mix well.
  4. Bring to a boil, cover with a lid, reduce heat to medium-low, and cook for about 15-20 minutes until the rice is tender.
  5. Once cooked, mix in some cheese and top with remaining cheese; allow it to melt either on low heat or briefly under the broiler.
