  • 1 cup beef broth
  • 1 cup milk
  • 2 ½ cups medium shell pasta
  • 2 (10 oz) cans mild enchilada sauce
  • salt
  • pepper
  • chili powder
  • cumin
  • dried cilantro
  • cayenne
  • minced garlic
  • shredded Colby Jack cheese
  • fresh cilantro
  • sour cream

Instructions

  1. In a large skillet over medium-high heat, brown the ground beef. Add the chopped onion and cook until fully browned; drain excess grease.
  2. Season the mixture with salt, pepper, chili powder, cumin, cilantro, cayenne, and garlic. Stir to combine.
  3. Add beef broth, enchilada sauce, uncooked pasta, and milk. Bring to a boil then reduce heat to medium-low; cover and cook for about 12 minutes, stirring halfway through.
  4. Once pasta is cooked through, stir in 1 cup of shredded cheese until melted. Top with remaining cheese; cover until melted.
