  • 150 ml Milk (whole or semi-skimmed)
  • 4 Chai tea bags
  • 135 g Unsalted butter (softened)
  • 135 g Light brown soft sugar
  • 2 Large eggs
  • 1 tsp Vanilla extract
  • 200 g Self-raising flour
  • Spices: Cinnamon, ground ginger, ground cloves, ground cardamom, ground nutmeg

Instructions

  1. Warm the milk until hot but not boiling; steep the chai tea bags for 10-15 minutes. Remove bags and squeeze out flavor.
  2. Preheat your oven to 160C Fan/180C/350F/Gas Mark 4 and line a cupcake tin with cases.
  3. In a bowl, mix softened butter and brown sugar until smooth. Add eggs and vanilla; whisk until combined.
  4. Gradually incorporate self-raising flour and spices; mix gently until just combined.
  5. Stir in 90 ml of chai-infused milk until well blended.
  6. Fill cupcake cases evenly and bake for 20-25 minutes until golden brown. Cool on a wire rack.
  7. For the icing, beat butter with icing sugar and spices; add remaining chai milk as needed for consistency.
  8. Once cooled, ice the cupcakes and enjoy!
