  • 1/2 cup unsalted butter (browned)
  • 1/4 cup + 2 tablespoons granulated sugar
  • 1/2 cup brown sugar
  • 1 egg
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 3/4 cup old-fashioned rolled oats
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon ginger
  • 1/2 teaspoon nutmeg
  • 1/4 teaspoon salt
  • 3/4 cup finely grated carrot (about 23 medium carrots)
  • 1/3 cup shredded sweetened coconut

Instructions

  1. Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. In a large mixing bowl, combine browned butter, granulated sugar, brown sugar, egg, and vanilla extract. Mix until well combined.
  3. In another bowl, whisk together flour, oats, baking soda, cinnamon, ginger, nutmeg, and salt.
  4. Gradually add the dry mixture to the wet ingredients until just combined.
  5. Fold in grated carrots and shredded coconut evenly throughout the dough.
  6. Scoop tablespoon-sized portions onto prepared baking sheets, spacing them two inches apart. Bake for about 10 minutes or until golden brown around the edges.
  7. While cookies cool, prepare the buttercream by beating together softened butter, chilled cream cheese, powdered sugar, vanilla extract, and heavy cream until fluffy.
  8. Once cooled completely, spread or pipe buttercream on one cookie and top with another to form a sandwich.
