  • 3 cups elbow macaroni
  • 2 lbs fresh crab legs or 2 ½ cups imitation crab meat, diced
  • 2 lbs shrimp, peeled and deveined
  • 1 cup whole milk
  • 22 ⅔ cups evaporated milk
  • 4 cups sharp cheddar cheese, grated
  • 2 cups mild cheddar cheese, grated
  • 2 cups colby & Monterey Jack cheese, grated
  • Cajun seasoning

Instructions

  1. Heat a large skillet over medium heat. Toss shrimp with olive oil, Cajun seasoning, salt, and pepper. Cook until pink (4-6 minutes). Set aside.
  2. Preheat oven to 350°F (177°C).
  3. Cook elbow macaroni in salted boiling water until al dente; drain and combine with shrimp and crab in a large bowl.
  4. In another bowl, whisk together whole milk, evaporated milk, spices, and beaten eggs.
  5. Stir in most of the cheeses into the milk mixture; pour over pasta mixture.
  6. Transfer to a baking dish; top with reserved cheeses and extra seasoning.
  7. Bake for 45-55 minutes or until golden brown.
