  • 2 tablespoons olive oil
  • 8 cups cabbage (cut into 1” pieces (1 small cabbage))
  • 2 teaspoons salt (divided)
  • 1 pound ground beef
  • 1 small onion (diced)
  • 2 cloves garlic (minced)
  • 14.5 ounces diced tomatoes (1 can)
  • 8 ounces tomato sauce (1 can)
  • 2 teaspoons dried Italian seasoning
  • 1 teaspoon black pepper
  • 2 cups white rice (cooked)
  • 1 cup cheddar cheese (shredded (cheddar, mozzarella, pepper jack))

Instructions

  1. Cook 1 cup of rice according to package instructions.
  2. Preheat the oven to 350°F and lightly grease a 9×13" casserole dish.
  3. In a large skillet, heat olive oil over medium heat. Sauté diced cabbage with 1 teaspoon salt for 8 minutes until tender. Set aside.
  4. In the same skillet, brown the ground beef over medium-high heat for 5 minutes. Add diced onion and garlic; cook until onion is tender.
  5. Stir in diced tomatoes, tomato sauce, Italian seasoning, black pepper, and remaining salt. Mix well.
  6. Remove from heat and combine cooked rice and sautéed cabbage into the meat mixture.
  7. Transfer to the baking dish, top with shredded cheese, and bake for 20–25 minutes until cheese is melted and bubbly.
  8. Garnish with green onions or parsley before serving warm.
