  • 1 medium red onion (thinly sliced)
  • 4 cloves garlic (minced)
  • 1 medium head green cabbage (cut into 1-inch pieces)
  • 3 medium Yukon Gold potatoes (peeled and cut into 1-inch chunks)
  • 1 ½ cups vegetable broth
  • Salt and pepper to taste
  • Spices: paprika, oregano, crushed red pepper flakes
  • 1 teaspoon lemon juice

Instructions

  1. Melt the butter in a Dutch oven over medium-high heat.
  2. Add sliced red onion and cook until soft (about 4–5 minutes).
  3. Stir in minced garlic and cook for 30 seconds until fragrant.
  4. Combine chopped cabbage, Yukon Gold potatoes, vegetable broth, salt, pepper, paprika, oregano, lemon juice, and crushed red pepper flakes.
  5. Cover and simmer on medium-low heat for approximately 10 minutes while stirring occasionally.
  6. Remove the lid; increase heat to medium-high. Cook until most liquid evaporates (about another 14 minutes), stirring gently.
  7. Serve hot with optional garnish of freshly chopped parsley.
