  • 1/2 cup unsalted butter
  • 2 cups graham cracker crumbs
  • 8 ounces cream cheese (softened)
  • 1 large egg
  • One 14-ounce can sweetened condensed milk
  • 2 teaspoons vanilla extract
  • 1/2 teaspoon salt

Instructions

  1. Preheat the oven to 350°F and line a 9×9-inch baking pan with aluminum foil, spraying it with cooking spray.
  2. In a medium saucepan over medium heat, melt the butterscotch chips and butter together while whisking continuously for about 5 minutes.
  3. Stir in the graham cracker crumbs until fully combined, reserving one heaping cup.
  4. Press the remaining mixture into the bottom of the prepared pan as the crust.
  5. In a mixing bowl, beat softened cream cheese until fluffy. Add the egg, sweetened condensed milk, vanilla extract, and salt; mix until smooth.
  6. Pour the cheesecake filling over the crust and sprinkle with reserved crumb mixture.
  7. Bake for 32–35 minutes until set but slightly jiggly in the center. Allow to cool before refrigerating.
