  • 1.5 cups fresh chopped tomatoes
  • 1/2 yellow onion
  • 2 tbsp olive oil
  • 1 tsp salt
  • 1/4 tsp black pepper
  • 1/2 tsp dried thyme
  • 1 lb pasta

Instructions

  1. Preheat oven to 450°F (232°C). Line a baking sheet with parchment paper.
  2. On the baking sheet, combine frozen butternut squash, chopped tomatoes, and sliced onion.
  3. Drizzle with olive oil and season with salt, black pepper, and thyme; mix well.
  4. Roast for about 20 minutes until vegetables are tender.
  5. Meanwhile, cook the pasta according to package instructions; reserve 1/3 cup of pasta water before draining.
  6. Transfer roasted veggies to a blender, add reserved pasta water, and blend until smooth.
  7. Toss the creamy sauce with cooked pasta and serve immediately.
