  • 1 lb chicken breasts
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 1/2 tsp smoked paprika
  • 1/2 tsp garlic powder
  • 1 tbsp ranch seasoning
  • 1/2 cup mild buffalo sauce
  • 23 large russet potatoes
  • 1 chopped onion
  • 1 large handful of broccoli
  • 12 tbsp olive oil
  • Shredded mozzarella cheese
  • Chopped green onions

Instructions

  1. Cut chicken into cubes and season with salt, pepper, garlic powder, smoked paprika, and ranch seasoning. Mix with buffalo sauce until well coated.
  2. Scrub potatoes and chop them into small cubes. Chop onion and broccoli into smaller pieces.
  3. In a bowl, combine potatoes, onion, broccoli with olive oil and seasonings.
  4. Lay aluminum foil on a flat surface; spray lightly with cooking spray. Place vegetable mixture onto foil and top with seasoned chicken.
  5. Seal the packets tightly and cook on medium heat on the grill for about 20 minutes until chicken is cooked through (165°F internal temperature) and potatoes are tender.
  6. Open packets carefully, sprinkle with mozzarella cheese, then return to grill for a couple of minutes until cheese melts.
  7. Garnish with chopped green onions before serving.
