  • 1 tsp lemon juice
  • 2 tsp vanilla extract (1 for batter, 1 for glaze)
  • 1 1/2 cups flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/8 tsp salt
  • 1 egg
  • 1/2 cup low-fat buttermilk
  • 2 tbsp melted butter
  • 2 cups powdered sugar (for glaze)
  • 1/3 cup apple juice

Instructions

  1. Prepare blueberry syrup by heating blueberries with lemon juice and sugar in a pot, then puree once cooked.
  2. Preheat oven to 350°F (175°C) and grease your doughnut pan.
  3. In a bowl, mix egg, sugar, buttermilk, melted butter, blueberry syrup, and vanilla extract until smooth. Sift in flour, baking powder, baking soda, and salt; fold in remaining blueberries.
  4. Pipe the batter into the doughnut pan and bake for about 10–11 minutes until golden brown. Cool on a wire rack.
  5. For the glaze: Simmer apple juice until reduced; add blueberry syrup and whisk in powdered sugar until smooth.
  6. Dip cooled doughnuts into the glaze and let excess drip off before serving.
