  • 1¾ cups low-fat buttermilk
  • 2 tsp vanilla extract
  • Zest from 1 large lemon
  • 2 tbsp lemon juice
  • 1214 oz fresh blueberries

Instructions

  1. Preheat the oven to 350°F (175°C) and grease two 9-inch round cake pans.
  2. In a mixing bowl, cream together butter, white sugar, and brown sugar until light and fluffy.
  3. Add eggs one at a time, mixing well after each addition.
  4. In another bowl, whisk together flour, baking powder, and salt. Gradually incorporate this into the wet mixture while alternating with buttermilk until just combined.
  5. Stir in vanilla extract, lemon zest, and lemon juice. Gently fold in fresh blueberries.
  6. Divide the batter between prepared pans and bake for about 20 minutes or until a toothpick inserted comes out clean.
