  • 46 taco tortillas
  • 1 lb cod fillet
  • 3 tbsp unsalted butter (melted)
  • 1 1/4 tsp smoked paprika
  • 1 1/2 tsp garlic powder
  • 1 1/2 tsp onion powder
  • 1 tsp dried oregano
  • 1 tsp dried thyme
  • 1 tsp black pepper
  • 1 1/2 tsp salt
  • 1/4 tsp cayenne pepper
  • 1 tsp brown sugar packed
  • 1 cup shaved purple cabbage
  • 1 tbsp white grape juice vinegar
  • 1 tbsp lime juice
  • 1/2 tbsp white granulated sugar
  • 1 ripe mango
  • 1/4 cup diced red onion
  • 1 jalapeno pepper (seeded and minced)
  • 1 tbsp fresh minced cilantro
  • 1 lime – juice only

Instructions

  1. Pat the cod fillet dry with paper towels.
  2. Mix spices in a bowl: smoked paprika, garlic powder, onion powder, dried oregano, dried thyme, black pepper, salt, cayenne pepper, and brown sugar. Coat the fish evenly with the spice blend.
  3. Heat a skillet over medium-high heat and add melted butter. Cook the seasoned fish for 3–4 minutes on each side until flaky.
  4. In another bowl, combine shaved cabbage with white grape juice vinegar, lime juice, and sugar to create the slaw.
  5. Dice the mango and mix it with red onion, jalapeno pepper, cilantro, and lime juice to prepare the salsa.
  6. Warm tortillas in a skillet or microwave; assemble tacos by layering slaw and fish topped with mango salsa.
