  • 1/2 cup light or dark brown sugar (packed)
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 10 tablespoons unsalted butter
  • 2/3 cup + 1/4 cup semi-sweet chocolate chips
  • 1/4 cup unsweetened Dutch cocoa powder
  • 2/3 cup + 1 tablespoon all-purpose flour
  • 1 teaspoon espresso powder
  • 1/2 teaspoon fine sea salt
  • Biscoff cookies (for topping)

Instructions

  1. Preheat your oven to 350°F (180°C) and line an 8×8 baking pan with parchment paper.
  2. In a mixing bowl, whisk together sugars, eggs, and vanilla until well combined.
  3. Melt butter and chocolate chips in a microwave-safe bowl until smooth; whisk in cocoa powder.
  4. Combine the melted chocolate mixture with the egg mixture until just mixed.
  5. Fold in flour, espresso powder, and salt until barely combined.
  6. Pour half of the brownie batter into the prepared pan; layer with cookie butter and remaining batter on top.
  7. Top with crushed Biscoff cookies and drizzle additional cookie butter before baking.
  8. Bake for about 30–40 minutes until a toothpick comes out with moist crumbs.
  9. Let cool completely before cutting into squares.
