  • 8 flour tortillas
  • 2.5 cups shredded chicken
  • 1/2 cup black beans
  • 1/2 cup corn
  • 1 can (10 oz) diced tomatoes with green chiles
  • 1 tsp cumin
  • 2 small cans red enchilada sauce
  • 8 oz shredded cheese (cheddar and Monterey Jack blend)
  • Fresh cilantro for garnish

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a large mixing bowl, combine shredded chicken, black beans, corn, diced tomatoes, cumin, garlic powder, and onion powder.
  3. Spread 1/2 cup of enchilada sauce in the bottom of a 9×13 baking dish.
  4. Dip each tortilla into the remaining enchilada sauce and fill with about 1/3 cup of the chicken mixture.
  5. Sprinkle cheese on top of the filling and roll up the tortilla seam-side down in the baking dish.
  6. Repeat until all tortillas are filled and arranged in the dish. Pour remaining sauce over enchiladas and sprinkle with leftover cheese.
  7. Bake for about 20 minutes until bubbly and golden.
