  • 2 lbs beef stew pieces
  • 5 cups beef stock
  • 2 onions (diced)
  • 1 sweet potato (peeled and cubed)
  • 3 carrots (peeled and sliced)
  • 3 tbsp olive oil
  • 1 pre-made pie crust

Instructions

  1. In a Dutch oven over medium-high heat, heat olive oil and sear the beef pieces until browned on all sides. Remove and set aside.
  2. In the same pot, sauté diced onions, carrots, sweet potato, and minced garlic for about 5–7 minutes until softened.
  3. Add seared beef back to the pot along with thyme, oregano, salt, and pepper. Stir to combine.
  4. Pour in beef stock and tomato paste; bring to a boil then reduce heat to low. Cover and simmer for about 90 minutes until tender.
  5. Preheat oven to 425°F (220°C). Roll out your pie crust if necessary.
  6. Spoon the stew into your pie crust; cover with another layer of pastry or seal with fork prongs.
  7. Bake for about 30–35 minutes until golden brown on top. Cool slightly before serving.
