  • 2.53 pounds beef chuck roast
  • 2 pounds beef short ribs
  • 68 dried Guajillo peppers
  • 3 canned chipotles in adobo
  • 1 large white onion
  • 10 cloves garlic
  • 1/4 cup apple cider vinegar
  • 3/4 lb. Oaxaca cheese
  • Kings Hawaiian sweet slider rolls

Instructions

  1. Cut beef chuck roast into large chunks and season with salt and pepper.
  2. In an Instant Pot or Dutch Oven, heat vegetable oil and brown the beef chunks on all sides.
  3. Blend Guajillo peppers, chipotles, onion, garlic, bay leaves, spices, tomato paste, vinegar, and stock until smooth.
  4. Pour the sauce over the browned meat; cook in the Instant Pot for 60 minutes or in a Slow Cooker for 6-8 hours.
  5. Shred the beef after cooking and return it to the pot.
  6. Assemble sliders by layering shredded beef and cheese on buns; broil until cheese melts.
  7. Serve hot with toppings like pickled onions, cilantro, jalapeños, and lime wedges.
